Apple Strudel
Ingredients for 8 servings: 1 puff pastry round sheet; 5/6 apples – peeled, cored, quartered and sliced; 1 tbsp butter; 2 tbsp sugar; apricot jam q.s.; raisins to taste; milk q.s.; brown sugar q.s.
Method:
First of all peel, core and cut the apples into slices. Place your apple slices in a pan with the butter, the sugar and the raisins. Cook them until butter is melted and the apples juice evaporates completely. Mix everything while cooking, being careful not to break the apples when mixing them. When they are ready remove from the heat and let cool. Take your pastry sheet and spread some apricot jam on the pastry leaving about 2 cm to the edge. Spread the apple-raisin-filling over the jam. Fold the long sides onto the apples and then fold also the short sides so the filling won’t get lost when cooking. Place your strudel on a lined baking sheet, seam-side down. Brush it with some milk and dust with some brown sugar. Bake for about 25 minutes at 200°C until golden and crisp. Leave to cool to room temperature. Slice and serve with whipped cream or ice cream.
